Bonsai Banana Bread

Last year John and I went to Kauai for two weeks and stayed with some of our super good friends, Chris and Julia. We love this couple! Not only are the chillest people we know and total free spirits, but they also photographed our wedding four years ago. I worked with Julia for a number of years when she was our ceramics teacher at the high school I teach at. Being in the same department we naturally became good friends and I was so sad when she said she was going to leave. But I was so excited when she said it was because she was leaving to move to Kauai with her hubby.

Chris is the perfect compliment to Julia, he’s a photographer and she’s an artist. He chops fresh coconuts as she gardens. They surf together every day on some of the best waves in the world and they hike the Na Pali Coast on the weekends. This couple truly lives life in paradise.

On our last trip to Kauai, I’m sure there will be many more, Chris made the most AMAZING bread for my birthday. Being gluten free I don’t bake much, but Chris being good at practically everything, made an INCREDIBLE Banana Bonsai Bread. This stuff makes your house smell so good as it’s baking that it’s hard to wait for it to cool down before you can take a bite.

Chris’s Banana Bonsai Bread

2 cups of flour (I used Pamela’s Baking Mix, because it’s gluten free)
1 teaspoon baking soda
1 teaspoon salt
1 stick of butter
3/4 cup of sugar
2 eggs
5 cups of bananas (over ripe)
1 bag of chocolate chips (TJ’s has gluten free chocolate chips)
honey
1. Preheat oven to 350. Heavely grease 2  9 x 5 inch loaf pan with butter.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl , cream together butter and brown sugar. Stir in eggs and mashed banana until well blended.  Stir in banana mixture into flour mixture; stir just to moisten.
3. Fold chocolate chips into batter.
4. Pour batter into loaf pan. Lightly pour uncooked oatmeal on top and hop the mixture to allow the oats to evenly spread.
5. Coat with an even coat of honey.
6. Put little slices of butter on top.
7. Cook for 50-55 minutes.
My friend Noelle’s family raises chickens and her little sis puts their initials on the eggs. So cute!
Yes, my stove is from the 50’s. Don’t be jealous. Or sad for me.
I told you it was insanely amazing! It will be all gone by friday.
