Every single day I am at school, one of my photo students asks me what I’m drinking. For good reason I suppose, as I proudly walk around the classroom with a big glass jar (a repurposed peanut butter glass jar) filled with a mysterious green liquid.
They always ask, “What is that Mrs. Fox?” Or “That looks disgusting?” My favorite, “You seriously drink that everyday?” Sadly, “What’s kale?” These are the sorts of comments I get while I drink my very yummy smoothie during first and second period.
This blog post is for my students. I wish you would all start drinking healthy green smoothies in the morning, instead of the caffeine and sugar filled mocha lattes you bring to class.
The first ingredient that goes into our Vitamix is usually a mixture of frozen pineapple, frozen mangoes and a fresh banana. This is my base, but a couple days a week, I will do a blueberry, raspberry and banana combo.
Then I wash about 4 leaves of organic kale (or spinach, as I like to alternate everyday) and throw it into the blender. Kale and spinach are super greens and are uber healthy for you. I always give myself a large helping of these veggies (about 2 cups), as to make sure I am getting some of my required nutrients for the day.
As for the liquid, I like to add some coconut milk to give little fat and creaminess to the smoothie. But most of my liquid is purified water.
When I am feeling fancy and when we have them, I will throw in an avacado….SO good! And chia seeds and flax meal when I have the urge to be super healthy. I have even thrown in the pulp from our juicing leftovers, which gives it lots of fiber and texture. I’m excited when my boys can drink smoothies, because this will be such a great way to get some healthy goodness into them.

Yum Yum! I drink a green smoothie almost everyday. I do Spinach, apple juice or coconut water, frozen strawberries, frozen banana, flax seed oil, apple and frozen bluberries. Not always included is some yogurt.
